I was looking at the sos itb set up, or something similar, with a full stand alone management- Would this set up need to be constantly tuned or would dyno and road mapping once be sufficient?

A well designed system does not require constant adjustment.
The linkage design is the most crucial. Since each cylinder has its own throttle, it is crucial that the linkage joining each cylinder allow easy adjustment and has a way to retain that adjustment. Back in 2003, we initially worked with a company who's throttles were joined by threaded rods and rod ends. Each throttle pulled the throttle next to it. This design was very difficult to adjust and would fall out of adjustment easily. Since then, we went to a design that is shared by many OEMs like BMW. Each throttle blade's shaft is on the same axis. The adjustment is made with a simple threaded stud secured with a jam nut, very similar to how the NSX valve tappet works. This design is easy to adjust and keeps each throttle in sync.
