Well for an Exotic I really like the Pagani Zonda

Nothing beats the NSX.
I thought the interior for the S2000 is actually quite plain and boring.
I really like the E36 M3's dash layout and design. Material used feels pretty solid.
The layout for the NSX is pretty good too, but the plastic used feels pretty cheap for the MSRP of the car. Especially the handle of the turn signal, steering column and the center counsel. I don't know if they purposely use cheap plastic for weight saving or they're (Honda) just cheap.

Saab always have pretty interesting dash design. I like the "airplane" feel of the cockpit.
I would say the LF-A has a really nice and futuristic cockpit.

never been a fan of boxy interior like the supra. Thats not saying i don't like the car, just not the interior
