255.35.18 in the rear is fine. I just got that size put on my 18x10's in the rear and it looks great. I will probably get the 265's when they wear out though, as 265's will look even better (but still not too brawny) .
You can look up the range of approved tire widths for whatever tire you are planning to use. For example, the Bridgestone Potenza S-03 in that size is approved for rim widths of 9.0 to 10.5 inches. So you can certainly mount it on an 18x9 wheel. Since that's the low end of the approved range, it may look like it bulges out slightly, more so than with a 255/35-18, which is approved for 8.5-10.0 inch widths.
