What's worng with my aircon?

I do not use the car as often as I would like to. When I do take her out and use the aircon, it does not blow cold air until I hear the sensors (whistle sound) working. Sometimes it takes 15 to 20 minutes before the sensors starts working. Has anyone comes across this before?

Sounds like low pressure in your AC system. Just get a re-charge and make sure they do a pressure test to see if you aren't leaking fluid.

Sounds like you have the dreaded blower only runs on high problem. Can you get it to blow with the fan speed turned all the up to max?

The fan speed works at low and high. The cold air does not happen right away, or until the whistle from the sensors start going. Once the aircon starts blowing cold air, it keeps going all the time; the next day and so on.

The problem seems to happen after the car has sat for about 2 or more weeeks.

99rs suggest a re-charge of pressure. Might be a good place to start?
