Anyone shed any light on whether the NSX was over offered with a factory option of body - coloured roof panels? Looking at silver car circa '93.

No, it was not. If any pre-'95 NSX has a body-colored roof, it was repainted. Except for the black cars, of course.
The NSX-T only comes with a body-colored roof since its introduction in '95. Coupes since '95, except for the Zanardi, retain the black roof.

I seem to recall someone on either this forum or nsxsc that had a 2000 or 2001 silverstone coupe that came with a matching top from the factory.

When people ordered a '96+ coupe they were able to specify whether they wanted a black roof or body color roof. Rick W. owns a blue '97 coupe with a blue roof as well.
No US NSXs before '94 came from the factory with a body color roof. And only a few green '94s had the body color roof - the main switch was in '95 when they went to the -T.
The short answer is: No silver NSXs in the US circa '93 had a body color roof from the factory.
