Wheel Offsets - Is this right?

I've been reading through this forum to understand more about wheel offsets.

Can someone tell me if my understanding is correct?

Let me start with stock wheels. It is my understanding that they are as follows:

Front (7”)
Width =177.8mm
Center=88.9mm
Offset=56mm
Delta=58.3mm

Rear (9”)
Width=228.6
Center=114.3
Offset=56
Delta=58.3

Are these numbers right?

So the delta is the distance from the center + offset to end of the outer wheel. Is this correct?

So if this is correct, then why wouldn’t a new set of wheels with the same width and same tires size have the same offset? I’m currently looking at putting 18X9’s on my rear with 255/35/18 tires. It seems like would need a 56mm offset to get the same look as stock?

I must be missing something. Also, the other thing I can’t quite figure out is how tire widths play into this. That is, how do you determine how much tire will hang over the rim assuming that is what needs to be calculated.

OK, I'm getting smarter on this. Can anyone tell me the distance from where the tires moun to the fender lip on front and back?
